Ice cream lovers, rejoice! Salt & Straw has expanded their operations and they are shining under the bright Vegas lights as the brand opened two new locations at both Paris Las Vegas and Flamingo Las Vegas as of the start of 2026. Officially opening on December 31, 2025, these two shops mark the first time that Salt & Straw have operated on the Vegas strip.

To celebrate the grand opening of both Salt & Straw locations, a special menu has been curated by co-founder Tyler Malek. The menu features some iconic flavors and favorites across the brand’s scoop shops. And they are even offering what is being called The Icons Series which gives customers a chance to try some interesting flavors that are perfect for a celebration.

According to the press email we received on behalf of Salt & Straw the icon series menu available at both of the new locations includes:

– Pots of Gold & Rainbows – Hand-sorted rainbow marshmallows tossed into a cereal-steeped ice cream
– Birthday Cakes & Blackberries – Hunks of rainbow-sprinkled birthday crumble studded throughout double-vanilla ice cream and ribboned with blackberry jam
–  Almond Brittle with Salted Ganache – Pieces of almond brittle and hunks of creamy chocolate ganache swirled in vanilla ice cream
– Chocolate Chili Crisp Peanut Butter Cups – Milk chocolate ice cream with bite-sized, housemade chili crisp peanut butter cups, swirled with peanut butter marshmallow fluff 
– Death by Chocolate Chocolate Cake (v) – Chocolate barley oat milk swirled with chocolate caramel fudge and hunks of chocolate cake, finished with a chocolate ganache 

While all five of these flavors sound amazing, we are also excited to see what else makes it to the menu for both locations, as we expect to see even more unique flavors. Of course, the 13 permanent menu items can still be purchased in both of these Vegas Strip shops. So if you’re on the hunt for their iconic Honey Lavender or the Sea Salt with Caramel Ribbons, Salt & Straw has you covered.

If you are heading to Vegas, make sure you stop into either the Paris Las Vegas or the Flamingo Las Vegas locations. You won’t be disappointed if you love decadent ice cream in fascinating flavor profiles.
